Easy homemade muffin recipes for kids and parents to make together. Kids will love these healthy school snacks.

Quickest and easiest muffins to make are the store bought brands. They only require a little water to create the batter. Some of the store bought variations require eggs and oil, but the addition of just water is a no-excuse way to have delicious muffins for students to bring to school.

Complete muffin mix can be found at the local grocery store in the baking aisle. When comparing prices, be sure to add in the cost of the egg and oil. As well, bulk up on the mix and place in the freezer for future use.

The best mix to use is the all purpose muffin mix. Addition of ingredients to the muffin mix will create a healthy nutritious school snack. The second best is the carrot muffin mix, as a child is probably unwilling to add a few handfuls of shredded carrot into the batter.

To make delicious healthy muffins have a supply of healthy ingredients on hand. Oatmeal, bananas, variety of fruit, granola cereal, flax seed, applesauce, dried fruit, and chocolate chips.

Below is a sample recipe to make with children. Once the basic batter is made it is up to the bakers which ingredients will be added. Kids will not know ground flax seed is a healthy addition rather a required element of the muffin. Enjoy baking these healthy muffins.

Chocolate Chip Muffin Recipe

Ingredients

  • all purpose muffin mix
  • water
  • ripe banana
  • ground flax seed
  • mini chocolate chips
  • granola cereal (peanut free)

Materials

  • medium sized mixing bowl
  • muffin pans of any size (mini, regular, or extra large)
  • metal spoon
  • wooden spoon

Instructions

  1. Place 3 cups of the all purpose muffin mix in a bowl.
  2. Add a 1/2 cup of oatmeal, 1/2 cup of granola cereal, and 1/4 cup of ground flax seed to the bowl. Mix all the dry ingredients together.
  3. Mash 2 ripe bananas together. Mix into the dry ingredients.
  4. Add approximately 2 cups of water to the dry mix. Stir just until all dry ingredients are moistened. Consistency should be thick not runny like cake batter.
  5. Add a cup of chocolate chips to the batter. Gently stir into batter.
  6. Spray the desired muffin pans with cooking spray or line with paper muffin liners. Mini muffins are the ideal size for school snacks.
  7. Spoon the muffin mixture into the desired muffin pan.
  8. To create a muffin top, muffin mix must be at the top of the muffin tin.
  9. Cook in a 350 degree preheated oven for approximately 20 minutes. Smaller muffins will cook faster than the larger muffins.

Baking fresh healthy snacks for schools is a wonderful family activity. These delicious muffins are a great addition to a students school lunch bag.
