Fudge Chews
Ingredients:
2 cups sugar
1/2 cup milk
1/2 stick butter or margarine
3 tablespoons cocoa
3 cups quick oats
1/2 cup peanut butter
1 teaspoon vanilla
Coconut and nuts (optional)
Directions:
Put sugar, milk, butter, and cocoa in a saucepan and bring to a boil. Boil for 1 minute.
Remove from heat and stir in peanut butter, oats, and vanilla. Stir well.
Drop by teaspoonfuls on waxed paper. This is the time to roll in coconut or nuts, if desired.
Let cool and enjoy.
Microwave Fudge
Ingredients:
1/2 cup sweet butter
1/4 cup milk
1 (6 oz.) package semi-sweet chocolate morsels
3 cups confectioners sugar
1 teaspoon vanilla extract
Directions:
In a large microwave-safe bowl combine butter, milk, chocolate morsels, and vanilla extract.
Microwave on high for 2 minutes or until butter and morsels are melted. Stir to blend.
Stir in confectioners sugar.
With an electric mixer at medium speed, beat for 3 minutes or until smooth.
Spread in a greased baking pan, cover, and refrigerate for 1 hour or until firm.
Cut into square pieces and enjoy.
Peanut Butter Fudge Bars
Ingredients:
1 package yellow cake mix
1/2 cup melted butter or margarine
2 eggs
1 cup peanut butter, creamy
1 cup milk chocolate chips
1 can sweetened condensed milk
Directions:
Preheat oven to 350 degrees F.
Mix together cake mix, butter, and eggs. If the dough is too soft, chill it for about 10 minutes.
Press 2/3 of the mixture in the bottom of a 9x13 inch pan.
Melt chocolate chips, condensed milk, and peanut butter on stovetop.
Pour chocolate mixture over cake mixture, covering completely.
Make small patties of the remaining cake mixture and place randomly on top of the chocolate to create a marbeled look.
Bake for 25 minutes.
Let cool completely before cutting into squares.
Quick Peanut Butter Fudge
Ingredients:
1 box confectioners sugar, sifted
3/4 cup crunchy peanut butter
1/4 cup milk
1/4 cup butter or margarine, cut into 8 pieces
1/2 teaspoon salt
Directions:
Place all ingredients in a 2-quart glass casserole dish.
Microwave for 2 minutes.
Stir until blended well.
Spread in a greased 8-inch square glass cake dish.
Refrigerate until firm (about 1 hour), and cut into squares.
Cream Cheese Fudge
Ingredients:
1 (6 oz.) package cream cheese, softened
1/2 teaspoon vanilla extract
4 cups confectioners sugar, sifted
4 ounces unsweetened chocolate, melted
1 cup walnuts, chopped
Directions:
In a medium bowl beat cream cheese until smooth.
Beat in vanilla.
Beat in confectioners' sugar, a little at a time, until smooth.
Stir in melted chocolate.
Fold in walnuts.
Spread into a greased 8-inch pan.
Refrigerate for 1 hour or until firm.
Cut into squares and enjoy.
Peppermint Fudge
Ingredients:
2 (10 oz.) packages vanilla baking chips
1 (14 oz.) can sweetened condensed milk
1/2 teaspoon peppermint extract
1-1/2 cups crushed candy canes
1 dash red food coloring
Directions:
Combine vanilla chips and sweetened condensed milk in a saucepan over medium heat. Stir frequently until almost melted.
Remove from heat and continue to stir until smooth. When chips are completely melted, stir in the peppermint extract, food coloring, and candy canes.
Spread evenly in the bottom of an 8-inch baking pan.
Chill for 2 hours and then cut into squares.
